Fideo with Potatoes and Ground Beef

This warm and comforting Fideo with Potatoes and Ground Beef is a simple, one-pan family classic. In this version, lightly browned fideo noodles (vermicelli) are simmered in a savory tomato-chicken broth along with tender potato cubes and seasoned ground beef, creating a deeply flavorful and satisfying meal.


Ingredients

Ingredient Quantity
Potatoes 2 medium
Tomato 1 large
Onion 1 medium
Garlic cloves, minced 1 or 2
Knorr Chicken Flavor Cubes 2 cubes
Fideo Pasta (Vermicelli) 1 package (about 7 oz)
Ground Beef 1 package (about 1 lb)
Water 4–6 cups (as needed)
Cooking Oil 2–3 tablespoons
Salt and Pepper To taste

Instructions

Step 1: Prepare Your Ingredients

Chop the tomato and thinly slice half of the onion, keeping the remaining half for later. Mince the garlic. Peel and dice the potatoes into small, uniform cubes so they cook evenly.

Step 2: Brown the Ground Beef

In a separate pan, cook the ground beef over medium heat until fully browned. Season lightly with salt and pepper. Drain any excess grease and set the meat aside.

Step 3: Toast the Fideo

Warm the oil in a large, deep skillet or saucepan over medium heat. Add the fideo noodles and cook, stirring constantly, until they develop a deep golden color. This step gives the dish its signature toasted flavor, so watch closely to avoid burning.

Step 4: Add the Fresh Ingredients

Once the fideo is toasted, stir in the diced tomato, the sliced onion half, and the minced garlic. Cook for 2–3 minutes, allowing the tomato to soften and the aromatics to release their fragrance.

Step 5: Build the Broth

Pour in enough water to completely cover the pasta and vegetables (usually 4–6 cups). Add the chicken bouillon cubes and stir until they melt into the liquid. Bring the mixture to a gentle boil.

Step 6: Add Potatoes and Beef

When the broth is bubbling, add the diced potatoes along with the cooked ground beef. Mix well, cover the pan, lower the heat, and let it simmer for 20–25 minutes, or until the potatoes are soft and the flavors have melded together.

Step 7: Taste and Serve

Check the seasoning and add more salt or pepper if needed. Ladle the finished fideo into bowls and enjoy its rich, comforting flavor while warm.
