Cornstarch 1 tablespoon
Baking powder 1 teaspoon
Salt 1 teaspoon
Sugar 1 teaspoon
Cold club soda 1 cup
Fish fillets or chicken tenders As needed

Instructions

1️⃣ Mix the Batter

In a large bowl, whisk together the flour, cornstarch, baking powder, salt, and sugar until well combined.

2️⃣ Add the Club Soda

Slowly pour in the cold club soda, stirring gently until the mixture is mostly smooth. Don’t worry if it’s a bit lumpy—just avoid overmixing.

3️⃣ Heat the Oil

Fill a deep skillet or fryer with oil and heat to 350°F (175°C).

4️⃣ Prep the Protein

Dip each piece into the batter, allowing any excess to drip off before frying.

6️⃣ Fry to Perfection

Carefully place battered fillets or tenders into the hot oil. Fry in small batches for 4–6 minutes or until they’re golden brown and fully cooked. Avoid overcrowding the pan.

7️⃣ Drain & Serve

Remove from oil and place on paper towels to drain any excess grease. Serve immediately with your favorite dipping sauces and side dishes.
