Baking powder 4 tsp
Fine sea salt ½ tsp
Buttermilk 1 ⅓ cups
Large egg, beaten 1
Unsalted butter, melted 4 tbsp
Vanilla extract 1 tsp

Step 1: Cook the Sausage
Heat a non-stick skillet over medium heat. Cook the sausage links according to package directions, turning occasionally until browned and fully cooked. Transfer to a plate and allow to cool slightly.

Step 2: Prepare the Pancake Batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine buttermilk, beaten egg, melted butter, and vanilla extract until smooth. Gradually add the wet ingredients to the dry, stirring gently until just combined. Let the batter rest for 5 minutes—this keeps the pancakes tender and fluffy.

Step 3: Cook the Pancakes
Heat a lightly greased skillet or griddle over medium heat. Spoon about 3 tablespoons of batter per pancake, shaping each into a small oval roughly the length of a sausage. Cook 2–3 minutes until bubbles form and edges begin to set, then flip and cook another 2–3 minutes until golden. Repeat with the remaining batter.

Step 4: Wrap the Sausages
While the pancakes are still warm, place a cooked sausage in the center of each. Roll the pancake around the sausage, pressing the seam side down to keep it secure. Repeat for all sausages.

Step 5: Serve and Enjoy!
Arrange on a platter and drizzle with warm maple syrup, or serve syrup on the side for dipping. Optional: dust with powdered sugar or add fresh fruit for an extra touch of sweetness.
