This recipe pairs soft, fluffy pancakes with savory breakfast sausage links, all rolled into a convenient, handheld bite. Whether you’re rushing through a weekday morning, planning a weekend brunch, or making something special for kids, this dish is sure to be a hit.

Breakfast Pigs in a Blanket

Ingredients

Ingredient Quantity
Breakfast sausage links (cooked) 12
All-purpose flour 1 ½ cups
Granulated sugar 2 tbsp
Baking powder 4 tsp
Fine sea salt ½ tsp
Buttermilk 1 ⅓ cups
Large egg (beaten) 1
Unsalted butter (melted) 4 tbsp
Vanilla extract 1 tsp

Instructions

Step 1: Cook the sausage
Heat a non-stick skillet over medium heat and cook the sausage links according to package directions, turning occasionally until evenly browned and fully cooked. Set aside to cool slightly.

Step 2: Make the batter
In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, combine the buttermilk, beaten egg, melted butter, and vanilla extract until smooth. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined. Do not overmix. Let the batter rest for about 5 minutes.

Step 3: Cook the pancakes
Lightly grease a skillet or griddle and heat over medium. Pour about 3 tablespoons of batter for each pancake, shaping them into small rounds roughly the length of a sausage link. Cook for 2–3 minutes until bubbles appear and the edges begin to set, then flip and cook another 2–3 minutes until golden. Repeat with remaining batter.

Step 4: Assemble
While the pancakes are still warm, place a sausage link in the center of each one. Roll the pancake around the sausage and place it seam-side down to hold its shape. Continue with the remaining ingredients.

Step 5: Serve
Arrange on a plate and drizzle with warm maple syrup or serve it on the side for dipping. For extra flavor, add a dusting of powdered sugar or serve with fresh fruit.
