This warm, comforting dish stacks a classic homemade meatloaf beneath a blanket of creamy mashed potatoes and a bubbly layer of melted cheddar—baked together for the ultimate all-in-one dinner.

Meatloaf with Mashed Potatoes and Cheese

Ingredients

INGREDIENT — AMOUNT
Ground beef — 1 1/2 pounds
Egg — 1
Onion, finely chopped — 1
Milk (for meatloaf) — 1 cup
Dried bread crumbs — 1 cup
Salt and pepper — To taste
Potatoes, peeled — 2 pounds
Butter (for potatoes) — 1/4 cup
Milk (for potatoes) — 1/2 cup
Shredded cheddar cheese — 1 cup


How to Make It

Meatloaf

Step 1: Preheat the Oven
Set your oven to 350°F (175°C).

Step 2: Mix the Base
In a large bowl, combine the ground beef, egg, chopped onion, milk, bread crumbs, and a generous sprinkle of salt and pepper. Stir until everything is well blended.

Step 3: Shape and Bake
Mold the mixture into a loaf and place it in a lightly greased 9×13-inch dish. Bake for about 1 hour or until the internal temperature reaches 160°F (71°C).


Mashed Potatoes

Step 4: Cook the Potatoes
While the meatloaf is in the oven, simmer the peeled and quartered potatoes in salted water until soft—around 15 minutes.

Step 5: Mash Until Smooth
Drain the potatoes, then mix in the butter and milk. Mash until creamy and season as desired.


Assembly

Step 6: Drain Off Fat
When the meatloaf finishes baking, carefully pour away any excess grease from the dish.

Step 7: Layer the Topping
Spread the mashed potatoes evenly over the meatloaf, then shower the top with shredded cheddar cheese.

Step 8: Final Bake
Return the dish to the oven for about 15 minutes, or until the cheese is fully melted and lightly golden.

Step 9: Rest and Serve
Allow the dish to sit briefly, then slice and serve while warm.
