NO-BAKE Cream Cheese Coconut Snowballs

Bite-sized and full of creamy coconut goodness, these snowballs are as fun to make as they are to eat!


Ingredients

Ingredient Amount
Cream Cheese (softened) 8 oz
Confectioners’ Sugar 1/2 cup
Vanilla Extract 1 tsp
Sweetened Shredded Coconut 2 cups
Unsalted Butter (melted) 1/4 cup
Pinch of Salt 1 pinch

Instructions

  1. In a large bowl, beat the softened cream cheese until it’s smooth and creamy.
  2. Gradually add the confectioners’ sugar, mixing until fully incorporated.
  3. Stir in the vanilla extract for a sweet, aromatic touch.
  4. Fold 1 cup of the shredded coconut into the cream cheese mixture until evenly combined.
  5. Cover the bowl and chill in the refrigerator for 30 minutes to firm up the mixture.
  6. Once chilled, scoop small amounts and shape them into bite-sized balls.
  7. In a separate bowl, mix the remaining 1 cup of shredded coconut with melted butter and a pinch of salt.
  8. Roll each cream cheese ball in the coconut-butter mixture until fully coated.
  9. Arrange the coated snowballs on a parchment-lined tray and refrigerate for 15–20 minutes to set.
  10. Serve and enjoy these creamy, coconut-filled delights!
